Bedmi Aloo Sabji
TADKA + MIRALE + ALOO = Delicious Bedmi Aloo Sabji!
RECIPE:
PREPARE TADKA- Heat 2 tbsp Oil/Ghee in Kadhai and add 1 small tomato ( grated ), ½ tsp ginger jullians, and 1 green chilli (cut lengthwise).
ADD MIRALE MASALA- Add 1 tsp Mirale Bedmi Aloo Masala to the kadhai.
ADD ALOO- Add ½ kg boiled and mashed potatoes, 2 cups water, and salt to taste. Cover and bring to boil for 5-7 minutes on low flame. Adjust the consistency. Garnish with fresh coriander leaves and serve hot with Bedmi Poori or Kachori.

Paneer Masala
Ingredients:
- 200 grams paneer
- 1 tbsp oil
- 2 onions, chopped
- 6-8 cashews
- 6-8 garlic cloves
- Puree of 2 tomatoes
- 2 tbsp Mirale Paneer Masala
- Salt to taste
- Chopped coriander leaves
- Water, as much required
Method:
- Grind together onion, cashews and garlic cloves.
- Heat oil.
- Add in the prepared paste.
- Cook for 3-5 minutes.
- Add the tomato puree.
- Add Mirale Paneer Masala and salt to taste.
- Add water as per the desired consistency.
- Cook for 5-7 minutes.
- Garnish with chopped coriander leaves.
- Ready to serve.

Cut 500 grams of mangoes into small pieces. Mix the whole packet of masala. Add (heated and cooled) oil as required. Take an airtight and dry glass jar. Add the pickle to it and store.

Jaipuri Aloo Pyaaz Ki Sabzi
Ingredients:
- ¼ cup melted ghee
- 1 bay leaf
- 2 dry red chillies
- 2 medium sized onions, sliced
- 2 medium sized tomatoes, pureed
- ¼ cup yogurt(dahi), well whisked
- 1 tbsp Mirale Kitchen King Masala
- ½ tsp turmeric powder
- 1 and ½ tsp red chili powder
- 10-12 baby potatoes, peeled and washed
- 12-15 baby onions, peeled and washed
- 1 tsp whole coriander seeds
- 1-inch ginger
- 2 green chilies (less hot)
- 10-12 garlic cloves
- 50 g paneer, cut into cubes
- Oil for frying
- Salt to taste
Instructions:
- Heat ghee for frying in a cooking pan or kadai. Add peeled and washed baby potatoes, followed by paneer pieces.
- Fry on high flame until they become golden brown.
- In a grinder jar add 10-12 garlic cloves, 2 chopped green chilies and 1-inch ginger piece and onion.
- Add little water and make a smooth paste. Keep aside for now.
- Heat remaining ghee.
- Add the prepared paste.
- At this stage also add in the salt to taste.
- Let the paste cook till pinkish.
- Also add 1 tsp of cushed coriander seeds (sabut dhaniya).
- Let it cook for 2 minutes.
- Next goes in the powdered spices. Add ½ tsp turmeric powder, 1 and ½ tsp red chilli powder, 1 tbsp Mirale Kitchen King Masala.
- Cook for 2-3 minutes.
- Add tomato puree followed by yogurt.
- Cook on low to medium flame till the ghee oozes. This will take 15-20 minutes.
- Add in all the fried veggies to the curry.
- Cook on low flame till the potatoes are cooked. To check insert a toothpick and see.
- Next goes in 12-15 baby onions. Cook for 4-5 minutes.
- Add water as much required.
- Let it simmer for 5-7 minutes. Check and adjust the seasoning and consistency.
- Serve hot. Bon appétit!

Mumbai Pav Bhaji

RECIPE:
PREPARE TADKA- On low heat, melt 2 tbsp butter, and fry 2 chopped onions till translucent. To this, add ginger & garlic paste and 3 pureed tomatoes. Fry till done.
ADD MIRALE MASALA- Add 2.5 tsp of Mirale Pav Bhaji Masala and fry for a few minutes.
ADD VEGGIES- Now add 500 grams of boiled and mashed vegetables. Add salt to taste. Cook for 4-5 mins on low flame. Adjust the consistency. Lastly, add lemon juice and butter.
